Cartography Using the skill will not work and you will receive the message "That skill cannot be used directly." The skill requires a mapmaker's pen to craft maps. I also have never received an option to scale my map. Cooking Double-clicking on a food item will not work. The skill requires a cooking utensil in order to cook food. Also, bakeries do not sell the utensil needed to cook food with. Fletching Using a knife on a piece of wood will not work. The skill requires a flecther's tool to craft.
A lot of this was copied from historical sites that may or may not be accurate to era. I'd not bother citing every example of misinformation there until such time as administration states the Compendium has been fully updated.
