My old ass smoker that's approximately 30 years old. This was 3 out of 9 briskets I smoked last year for the District Track meet here. Mmmmm tasty! Maybe we can start a new thread for the weekend warrior cooks and bbq enthusiasts.

KCBS competitions have 4 categories, I compete in all 4. Most competitions focus on Pork cause that's what memorable to folks. But if its KCBS sanctioned, there are all 4 categories even it the website looks like all pork. Plus there is a peoples choice competition for Pulled Pork Chicken Ribs Brisket Pork Last year at this competition I placed 3rd in the People's Choice
Sorry for the lack of options in the OP guys. I really wanted more answers like we are getting and less actually answering the poll. As for me, I have a chemical imbalance that causes me to only sleep 3-4 hours a day, 5 hours max. So... that leaves me working one 10 hour a day job, 5 days a week, and another 3 hour a day job 3 days a week, and still leaves time for a wife and 4 kids that live with me and to write fantasy, horror, and sci fi. I recently signed a contract with a publisher, so I am about to stop my day job and write full time from the house again. That's my life in a nut shell
Not sure about the wood grilling comment... I and others use wood all the time for smoking the meats Never seen or heard of manufacturer injected meats... I think those are done for lesser quality cuts so they sell better. Everyone I know gets their meat raw and starts from there. Meat Checkin is on Friday, once checked in, you can inject, marinate, rub or otherwise prepare the meat
That's saying it must be wood, pellets or charcoal.. NO gas or electric unless that's how you start your wood fire. No Pits meaning you cant dig a hole at the contest area, nor can you just start a fire on the ground
